This winter has me in a baking mood and my hubby had a sweet tooth so it was the perfect combination to try a coconut flour cake. I just bought a ton of coconut flour and raw honey so I decided to give it a whirl. Needless to say it was a hit with the hubs.
Cake Ingredients
3/4 coconut flour ( I use Let's Do Organic brand)
3 whole eggs
1/4 cup raw honey
2 tablespoons unsweetened apple sauce
3 tablespoons coconut oil
1/2 teaspoon baking soda
1/4 teaspoon sea salt
2 teaspoons cinnamon
Swirl Ingredients
1 teaspoon Cinnamon
6 packets of stevia
1 tablespoon melted coconut oil
Directions
Preheat oven to 350 degrees. Mix coconut flour and eggs into a food processor then add on the honey and remaining ingredients. Mix the ingredients in a small bowl and fold into the cake mix just a bit so that it isn't fully mixed. Use s toothpick to spread it. Spray a small cake pan with nonstick spray and scoop mixture into pan. Bake for 20-25 minutes or until an inserted toothpick comes out clean.
