Bikini Bottom Stuffed Peppers
1 package lean
ground turkey (98% lean is preferred)
1 egg
1 cup brown rice, cooked
1 clove garlic chopped
1/2 Red Onion, chopped fine
1 cup Spinach
Half zucchini,
grated
1/2 cup oats, ground into oat flour
3 TB Mrs. Dash Cajun Seasoning or other no sodium seasoning
Directions
Mix the ingredients above with hands. Stuff
into a half of bell pepper that has been hollowed and seeds removed. Bake
Covered with tinfoil at 350 for 20 minutes and remove tinfoil.
