Mugcake Recipes

My favorite sweet treats are protein mug cakes. They let me hit my macros while allowing to satisfy a craving. I even have my husband begging for them. There are a lot of recipes out there so I decided to post my top choices. I have also included my new Cinnamon Roll icing that is out of this world! 

1. The Cupcake Mug Cake

1 scoop vanilla protein 

3 tablespoons of pasturized liquid egg whites

1/8 tsp baking powder

dash (and I mean a dash) of sea salt

1 packet stevia (optional)

Mix all ingredients in a bowl until batter like consistency. Spray mug with non-stick spray or coat with coconut oil and pour in batter into mug. Microwave for 1 minute to a minute and a half. Top with icing topping below.

Icing/Glaze Topping ( makes a lot so I save it) 

2½ cups powdered Erythritol
6 tbsp warm vanilla almond milk                                                                                                         
1/2 tsp vanilla extract                                                                                                                             
2 tbsp coconut oiil                                                                                                                                
¼ tsp fine sea salt
Mix powdered erythritol and almond milk in a bowl. Add the coconut oil and salt and stir until blended. Stir in the vanilla extract last. Sit in fridge overnight to thicken.

2. Fluffy Breakfast Mugcake
1/4 cup unsweetened almond milk         
1/2 tsp apple cider vinegar     
 2 tbsp PB2                                                                                                                                            
1 tbsp coconut flour                                                                                                                            
1/4 teaspoon baking soda                                                                                                                     
3 tbsp pasturized egg white or 1 whole egg                                                                                       
1/2 tsp vanilla extract                                                                                                                                            
1 packet of stevia
Mix all ingredients in a bowl until batter like consistency. Spray mug with non-stick spray or coat with coconut oil and pour in batter into mug. Microwave for 1 minute to a minute and a half. Top with icing topping below.
Cinnamon Roll Icing/Glaze:
2½ cups powdered *Stevia
6 tbsp warm vanilla almond milk                                                                                                           
1-2 Tbsp cinnamon      
1/2 tsp vanilla extract       
 2 tbsp coconut oiil                                                                                                                                                                                                                                                    
1/4 tsp butter flavoring                                                                                                                           
1/4 tsp fine sea salt
Mix powdered erythritol and almond milk in a bowl. Add the coconut oil and salt and stir until blended. Stir in the vanilla extract and butter flavoring last. Sit in fridge overnight to thicken.
3. Chocolate Coconut Mugcake:
1 scoop chocolate protein 
1 tsp cocoa poweder and 1 stevia packet
3 tbsp liquid egg white
1/4 tsp baking powder
dash of salt  
Mix all ingredients in a bowl until batter like consistency. Spray mug with non-stick spray or coat with coconut oil and pour in batter into mug. Microwave for 1 minute to a minute and a half. Top with toppings below or create your own. 
Toppings:
1 tbs Almond Butter 
1 Tbsp shredded dehydrated coconut flakes (unsweetened) I use Let's Do Organic

Butterfly Abs

  So I have to admit that I cannot believe I am actually writing this blog post. I have been so skeptical of any ab products on the market because as you know, abs are revealed through hard work in the gym and nutrition that is on point. End of story. Right? Not so fast. I have really struggled with abs since I began in the fitness industry. I hate even using the term abs because we all have abs so let’s talk about shredded, visible abs. I have never had them. I am not genetically gifted in the ab department and my bodyfat stays between 15-19% typically in the off season so while I maintain a flat stomach, my baby abs never poke through.
