Easy PB2 Peanut Butter Coconut Cookies

Well, Santa brought my hubby and I the flu for Christmas. No matter how hard I fought to stay well before the holidays, it happened. I will say that it has forced me to lay in bed and take it easy while catching up on reading, blogging, and sleep. On the flip side, it is absolutely killing me that I cannot be in the gym to use all of my new workout gear that Santa brought. I had planned on baking all weekend so that I could post some delicous healthy holiday treats, but I haven't had the energy to even get out of bed until today. I have been dying to make peanut butter cookies but wanted to come up with a recipe that didn't leave me trying to force myself to the gym with the flu. I had always wondered if PB2 would work well in a flourless recipe but couldn't find any that were without flour. So I played around and created these guys. They are quick and easy and are only 27 calories a pop! You can't beat that. 


Ingredients:
6 Tablespoons of PB2 (1/4 cup plus 2 Tbsp)
3 Tbsp liquid egg white ( you can use 1 whole egg as well but calories and fat will increase)
1 Tbsp Almond Butter
1/4 cup stevia
1 tbsp shredded unsweetened coconut (I use Let's Do Organic Brand from Wholefoods)

Instructions
Preheat oven at 350. Mix Pb2 with 3 Tablespoons of water and then add almond butter, liquid egg white or egg, and stevia. Mix thoroughly adding coconut shreds in last. Spoon out mixture ( I used a teaspoon to create 10 cookies) onto a pan lined with parchment paper and lightly sprayed with coconut oil. Bake at 350 for 8-10 minutes. 8 minutes will yield softer gooey cookies (which I prefer).

Butterfly Abs

  So I have to admit that I cannot believe I am actually writing this blog post. I have been so skeptical of any ab products on the market because as you know, abs are revealed through hard work in the gym and nutrition that is on point. End of story. Right? Not so fast.
