Protein Ice Cream Recipe and Variations

Protein Ice Cream Recipe I've had a lot of people ask me for the recipe to my protein ice cream. The good news is- here it is! The bad news is- you must have a vitamix or a blendtech to do this. It will NOT work in a regular blender or a magic bullet. I tried..and tried. I even used it with my Ninja and the blade just won't do it. So with that disclaimer, here it is!  (Note: Vitamix blenders are expensive but an investment that I can brag enough about. Best money I have ever spent- hands down) Protein Ice Cream Original  Ingredients (variations below) 1/2 cup unsweetened cashew milk  1 scoop protein (I use chocolate Sunwarrior but for the hubs I use Royal Sports Ltd. in chocolate cupcake) 1/2 tsp xanthan gum (to make it thicken like ice cream) To make it more rich, add 1/2 tbsp cocoa powder (optional) Ice  Directions  Add in cashew milk, protein, cocoa (if using) and xanthan gum into vitamix in that order. My Healthy Habit That Put Me In The Hospital

So it's been a while since I've blogged about my pregnancy. I'm sure I'm annoying half the world with my bump dates and belly pictures but my life went from bikini competitor to mommy to be and what can I say? I'm excited. I had planned to journal each week so I would have it to look back on (although I've been keeping a belly book for the baby) but life got in the way. It seems like yesterday we were just announcing the gender of our precious baby boy and now here I am almost 29 weeks. With work and life, it has flown by so quickly. Between my career and my training and nutrition clients I have been so busy that I didn't even realize it had gone by so quickly. Fortunately, I've had an amazing pregnancy and have still been active, hitting the gym 5 days a week with general modifications for pregnancy. I haven't had any "unhealthy" cravings. The only thing I've really craved is fruit, specifically watermelon and berries. As a competitor ...
